What data would be processed
Whatever is needed to process an order: name, shipping address, email and contact phone. Nothing else.
Health data is a special category: a real pharmacy shop cannot infer or store information about your health from what you buy without a specific legal basis.
How long it is kept
As long as tax rules require for invoices, and until you ask to be removed for everything else.
